Lumpia (Filipino Eggrolls)

Ingredients

Vegetables:
   1 head of cabbage
   8 carrots
   3/4 package of frozen mixed vegetables
   1 onion
   Variations:
      Bean Sprouts
      Green Beans
      Tofu - 1/4 inch cubes

Meat:
   1 1/2 lb Ground Meat (beef or pork)

2-4 cloves of Garlic
4-8 Tbs Fish Sauce
Salt and Pepper to taste

1 egg
Lumpia



This is not exactly a recipe...more of an outline of ingredients. 

My preference is to have 2-3 times more vegetables than meat.  Colorina showed me how to make the Lumpia using cabbage as the primary ingredient but this can be modified with some other vegetable such as bean sprouts.

The vegetables can be minced in a food processor or sliced julienne style.

Combine the meat, onion and garlic in a Wok and sauté.  Add 2-4 Tbs of Fish Sauce.  Salt and pepper to taste.  Set aside.

Combine remaining prepped vegetables in Wok and sauté.  Add 2-4 Tbs of Fish Sauce.  Salt and pepper to taste.

Combine all ingredients in bowl and begin wrapping.  Egg white is used to seal wrappers.

Note:
If you are unfamiliar with Fish Sauce you may leave it out.  It is used to add a sharp, salt like flavor.  It is made from fermented anchovies and has a strong fishy smell.  Despite this smell, the food does not develop a strong fish flavor.
